Using enzymes to produce of glucose syrup from starch can divided into two steps:
Step one: Add α-enzyme(amylase) change starch to dextrin or oligose, increased the solubility of starch, this process named liquefication.
Step two: Use saccharifying enzyme(glycosylase) make the oligose or dextrin further hydrolysing, chang the liquid to glucose syrup, this process called saccharification.
